Carabineros (sicilian shrimp)

Origin: Mozambique.

It is a delicious red shrimp species fished in the Mediterranean, which is a real gormandism. All parts of the body are great to use, its flesh is in the tail, but the flavors in the head and middle body are great as a basis for soups and sauces. Its tail can be grilled, steamed, but it is important not to dry it out with a long heat process.
